I stopped by for lunch following a friend's recommendation. As a vegetarian, I didn't have high expectations, but I was optimistic seeing several plant-based options and a predominantly Asian clientele—always a good sign of authenticity! The service was incredibly fast, and the atmosphere was buzzing with people coming and going. I also loved watching them hand-pull the noodles fresh. Wood Ear Mushroom Salad (10/10): This was the highlight! I’ve never had anything quite like it. The texture was unique—thin, crunchy, and satisfyingly snappy. The dressing was loaded with garlic and had just enough kick to clear the sinuses. Even with my low spice tolerance, I handled it well. I'd come back just for this dish! Spicy Oil Noodles (6/10): I ordered these mild, which might have affected the flavor, but I found the dish a bit bland. While the hand-pulled broad noodles were high quality and the toppings were fresh, it lacked a robust sauce—mostly just a watery, oily broth at the bottom. I ended up mixing in the mushroom salad to give it a boost. At around $20 for both items, the pricing is fair and on par with similar spots. I’ll definitely return to try their veggie noodles next time!

The hand pull noodles are tasty, however, the Chinese Hamburger (Pork Roujiamo)is a joke, we packed few to-go and when opened them, only minimal amount of meat is inside of the bun, we’ve been order same thing from different restaurants but this is the first time that I’ve seen the meat is so little. So, please take caution when you want to order this. Not worth the money, you could get a real burger with decent amount of meat in any other restaurant.

I went here for lunch after a friend recommended it to me. I did not expect much vegetarian but I saw some options and felt optimistic since it looked authentic and Asian folks were eating here. It was not busy and the service is super fast. I ordered the wide ear mushroom salad and spicy oil noodle. Mushroom Salad - 10/10 - I loved this dish and have never eaten anything like it. The mushrooms look strange but are super good. They are thin and crunchy and make a snapping texture. The dressing was really good too lots of garlic and decent spice to open up the nostrils. I have no spice tolerance and was able to handle this so probably not spicy for most of you. Not used to eating garlic a lot but there was bunch. Would come back for this. Spicy Oil Noodle - 6/10 - I ordered this less spicy so I don’t know if it affected the taste but this dish was kind of bland. It had some good toppings but really there was no sauce. There was a watery broth at the bottom with some oil but not much flavor. I ended up mixing the mushroom salad in here for more taste. It was not bad but not the best. However I loved the broad noodles and quality of the noodles was good. Just lacking flavor. Next ti

Found this spot while debating what to eat with some friends, we settled in this and were not disappointed. The restaurant has a great atmosphere and we were seated right away, there’s a window into the kitchen where you can see the chefs hand pulling fresh noodles. I had Spicy beef noodle soup along with chicken dumplings which were very flavorful but not as spicy as I’d like. I also had the chili oil fries but I wouldn’t really recommend them as they were very dense and not crispy at all.

It is situated at the hippest and most bustling part of Edison NJ; however, Dunhuang is tugged away in the far end corner, out of sight. So the fact that the restaurant was almost at capacity during our visit spoke volumes. It meant the clientele knew the place. Armed with recommended dishes from my brother, we were unphased by the vast offerings in the menu and placed order in no time: C8. Cold Skin Noodles $9.95. This is a unique appetizer from Northern China. This was the second time in my life that I tried this dish. It was far better than my first experience. It was refreshingly cold, and the flavor wasn't as heavy as it looked. The texture of the noodle was elastic and springy, very pleasing to the mouth. Highly recommended. N1. Signature Lan Zhou Beef Noodles $10.95. I guarantee you will see at least one bowl of this noodle soup on every table. While I have had this dish many times through Chinatown and Flushing, the broth had to be one of the best. The amount of protein left much to be desired, however. Only 4 thin slices of beef, that's a bit pathetic. Other than that, all other aspects were on point. N8. Pan Fried Noodles (lamb) $16.95. OK, don't be fooled
